The delicious lemon & avocado oil cake 

Method:

  1. Preheat your oven to a sunny 175°C. Grease and line a cake pan with parchment paper. Can you use avocado oil for this? H*ll yes!
  2. Zest the lemons and juice them, don’t be sour, it will be the cake’s super power. 
  3. In a large mixing bowl, whisk together the dry ingredients. The lemon zest, sugar, flour, baking powder, and salt.
  4. Make a well in the center of the dry ingredients. Pour the avocado oil in like it is gold, water, and lemon juice. Whisk until the batter is smooth and well combined. 
  5. Pour the batter into the prepared cake pan. Sprinkle a bit of extra sugar on top – as a sweet little kiss.
  6. Pop it in the oven for 45 minutes. Keep an eye on it and do the toothpick test to check if it’s done. No sour faces here!
  7. Take the cake out of the oven and let it chill for 10 minutes, then move it to a rack to cool completely. Patience, mates, patience.
