Looking for a light, refreshing dish that’s full of crunch and flavor? This crispy zucchini salad is just what you need!
Preparation:
- Slice the zucchini super thin with a mandolin or sharp knife. Sprinkle with a pinch of salt and let it sit for 15 minutes.
- Prepare the vinaigrette: finely chop the fresh mint. Mix in a small jar with the mustard, avocado oil, fresh lemon juice, salt, and pepper, and shake it well.
- Pat the zucchini slices dry and arrange them on a plate.
- Drizzle it generously with the vinaigrette, then add some halved mozzarella balls or torn burrata. Finish with a sprinkle of sunflower or pumpkin seeds.
