Veggie Fritters with Spicy Mayo recipe
Ingredients

Carrot

Cookes Quinoa

Oatmeal / whole wheat flour

Pepper
Fresh greens: parsley, coriander, dill, chives
Instructions:
1. Grate the carrots and the zucchini, or any leftover veggies. Let the zucchini sit with salt and squeeze the water out of it for a crispy result.
2. Combine the veggies with the cooked quinoa. You can substitute it with leftover millets or couscous.
3. Crack two eggs into the mixture for binding.
4. Add one cup of oatmeal or whole wheat flour to bring it all together.
5. Chop a selection of fresh greens—parsley, coriander, dill, and chives—and stir them in.
6. Season with salt and pepper to taste and whisk the mixture well.
7. Heat the avocado oil in a pan over medium heat, and cook the fritters until they’re golden and crispy on both sides.
8. For the spicy mayo mix the mayonnaise with some chili flakes, smoked paprika, cumin, coriander and lime juice, and whisk until smooth.
9. Serve the fritters hot and enjoy!
