You will need:
- 1 shallot, diced
- 2 garlic cloves, crushed

- ½ cup red or white wine vinegar
- Salt and pepper to taste
- Whisk shallot, garlic, oil, and vinegar in a small bowl.
- Season with salt and pepper.
- Drizzle over a green salad or keep covered in a jar in the fridge for up to five days.
